Bacon Egg Cups

Snowy days are meant for baking.  I'm always trying to find easy ways to meal prep for breakfast. I love eggs and bacon - I mean who doesn't so these were perfect for a snowy Sunday morning.

This recipe is so easy.  My daughter loves to help me in the kitchen and it's great for me as I have her try whatever we are making since she's such a picky eater.  They came out really good.

* Cook bacon for about 10/15 in the oven - only half cooked
* Spray muffin tins and line with half cooked bacon
* Add eggs to muffin tins ( I used organic eggs)
* Bake at 375 F for 10-20 minutes depending on how you like your egg

We seasoned the eggs with adobo and some Turmeric.  I started using turmeric about a year ago and add it to pretty much everything I make, I love it.  

We made some extras so that we can freeze and pop them in the microwave for a quick breakfast.  If you make them, let me know how you like them.
